01 - 8 slices whole wheat or white sandwich bread
→ Filling
02 - 4 oz cream cheese, softened
03 - 2 tbsp mayonnaise
04 - 1/4 red bell pepper, finely diced
05 - 1/4 yellow bell pepper, finely diced
06 - 1/4 cucumber, peeled, seeds removed and finely diced
07 - 1 small carrot, peeled and grated
08 - 2 tbsp chives or green onions, finely chopped
09 - Salt and freshly ground black pepper, to taste
→ Decoration (optional)
10 - 2 cherry tomatoes, sliced
11 - 2 tbsp pomegranate seeds
12 - Fresh basil or parsley leaves
# Directions:
01 - Use a star-shaped cookie cutter to cut a star from each bread slice; reserve scraps for breadcrumbs or other uses.
02 - In a mixing bowl, blend cream cheese and mayonnaise until smooth, then fold in diced red and yellow bell peppers, cucumber, grated carrot, and chopped chives. Season with salt and pepper.
03 - Spread a generous layer of the vegetable cream cheese mixture onto half of the star-shaped bread pieces, then top with the remaining pieces to form sandwiches.
04 - Gently press cherry tomato slices, pomegranate seeds, and herb leaves into the top of each sandwich to mimic jeweled accents.
05 - Arrange sandwiches on a platter and serve immediately or cover and refrigerate for up to 2 hours before serving.
